Black Bean Burger

My friend and I decided to make dinner plans together. She is a vegetarian and I love meat. I wasn’t sure what to make because how could I make dinner without meat. No meat? Are you kidding? Is this some kind of sick joke? Well as I looked up vegetarian recipes earlier that day I decided how fun it would be to make black bean burgers! It was something that always looked good but I had never been motivated to make them because I always went with the beef. Don’t get me wrong- I really like burgers made with beef, but when I made this I was very impressed! I added a few things to the beans, and I actually like the salsa/bean combo (see my recipe for shortcut beans and rice here) and was glad it turned out good. I have a feeling I’ll be trying more black bean burgers because there’s so many variations!

I ended up putting a few of the patties in my freezer for future meals when I need something quick to eat and don’t want fast food! Speaking of the freezer, this is something I can actually keep in the freezer at work so that I don’t have to stress when I forget to bring my lunch! Win!

Black Bean Burger

Ingredients

  • 1 15-ounce can Bush’s black beans, drained
  • 1 egg
  • 2/3 cup Italian breadcrumbs
  • ¼ cup salsa
  • Salt, to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon paprika
  • Burger Buns
  • Desired toppings:
  • Lettuce
  • Tomato
  • Ketchup
  • Mustard
  • White or red onion
  • Pickles

Instructions

  1. Heat olive oil in a large skillet to medium low heat.
  2. Place beans in a large bowl and mash well with a fork. Add egg, breadcrumbs and remaining ingredients. Mix together with hands until fully combined. Form into 4 large patties or 5-6 medium sized patties.
  3. Add to pan and cook each side for about 3-4 minutes.
  4. Transfer to a burger bun and serve with desired toppings.
