Cilantro Lime Chicken with Cauliflower “Rice”

When making a saucy dish you’ll have to make sure to have something to soak up all the goodness. And that is where the cauliflower “rice” comes in! You’ll get the taste of the coconut milk, lime, red pepper flakes and you get to enjoy all of that with the chicken and “rice”. Regular rice will also do the trick but for right now we are exploring other options, and that my friends is cauliflower rice. 

What is this “rice” you speak of? If you have no idea how to make it or don’t want to attempt to try, that’s okay because they sell it in the freezer section at Trader Joe’s! What a sneaky way to get people to eat their veggies! I was so excited to throw it right into the pot for a few minutes to heat it up and that was the extent of it! It might take some extra peer pressure for me to make this cauliflower rice myself, TJ’s makes it so easy! 

You’ll just add your chicken to a hot pan with some olive oil and brown on both sides. Remove the chicken and add the remaining ingredients. All of that gets whisked together and reduced for a few minutes. The chicken gets added back into the pot and everyone hangs out for about 15-20 minutes.

You’ll just love how the sauce comes together!
