A friend and I recently had a girls night and to get the night started we stocked up on goods from Trader Joe’s. For obvious reasons you should not go to the grocery store when you are hungry. You will probably come out with bags and bags of chips, cookies, frozen pizzas, cheese sticks, and everything else you find in aisle 7.

You will probably also end up forgetting the ONE or TWO things you went for.

Well the night ended up being really fun and I was inspired to make it myself! Conveniently located in the chips and snacks aisle was this jar of delicious looking salsa named Cowboy Caviar.

I knew it was love at first sight <3

Once you make this dip/salsa/whatever you want to call it… you’ll probably want to make it for your next potluck, family gathering, or just on a Sunday night. It’s gluten free as well as vegan and will be a hit!

The corn and white wine vinegar makes the perfect amount of sweetness and you probably won’t feel so bad because it’s just oh so fresh! 🙂

You will definitely want to skip the store bought salsa because it really takes minutes to prepare. And you end up getting waaaay more to serve to all of your friends and family.

They will definitely love you for it 🙂

Cowboy Caviar

Prep Time: 15 minutes

Cook Time: 5 minutes

Ingredients

  • ½ cup extra virgin olive oil
  • 1/3 cup white wine vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound (about 3-4) Roma tomatoes, diced
  • 1 15-ounce can blackeyed peas, rinsed and drained
  • 1 15-ounce can black beans, rinsed and drained
  • 1 11-ounce can sweet corn, drained
  • 1/2 red onion, diced
  • ½ cup diced green bell pepper
  • ½ cup diced red bell pepper
  • 1 cup fresh cilantro, chopped

Instructions

  1. In a large bowl, whisk together the olive oil, white wine vinegar, chili powder, salt, and pepper.
  2. Add tomatoes and remaining ingredients.
  3. Cover and chill at least 1 hour or overnight in order to blend flavors.
  4. Serve with tortilla chips.
