Garlic and Herb Roasted Sweet Potatoes

So I might have been a little late on the bandwagon, but I finally found out that it’s recommended that you soak your potatoes before baking them. Why didn’t anyone tell me this?? They hold so much water and it actually seems a little counter intuitive to me to soak them in water, but hey- I went with it and I didn’t get soggy potatoes! 

So I will save you some hassle and tell you now- once you chop all of your potatoes you will want to soak them in water for at least an hour. After you’ve poured out the water, rinse them off and lay them on paper towels to dry. Who woulda thunk?

Once you’ve covered them in the buttery and fresh herb olive oil mix, they’re ready for the oven.

How could I have forgotten the S & P?

These potatoes are full of so many fresh herbs and they would make a great side dish! If you have Easter plans go ahead and bring them to your gathering! Yum yum!
