Sausage and Peppers

I am picky about sausage, but have always enjoyed Italian sausage and peppers. I opted for the spicy italian sausage, but please use whatever tickles your fancy! This recipe calls for crushed tomatoes so it will produce more of a sausage, peppers, and onions dish in a tomato sauce.

Heat a pan to medium low heat with olive oil. We will start off by browning the sausages on each side. No need to worry about cooking them fully, we just want a good sear and color on the sausages.

Go ahead and turn up the heat to medium heat and add in the onions and bell peppers. Cook the onions and peppers for about 7-8 minutes until they get soft.

I like to season my food as I go, so now would be a good time to season however you like. I seasoned with salt, pepper, oregano, parsley, and basil.

You will want to have another pot on hand so that there is enough room to put it all together. In the pot, add in the crushed tomatoes, sausages, and vegetables.

Your sausage and peppers sauce should look something like this:

sauce 1

sauce 2
Cover the pot and simmer for about 20 minutes.

Boil the penne noodles al dente. Once your noodles are done, mix the meat sauce mixture with the noodles. Enjoy!
