Strawberry Brownie Skewers

We’re four days away from Valentine’s Day! Whether you have a valentine or you plan on enjoying a solo date night, you’re going to love these strawberry brownie skewers. It took SO much self control for me not to eat them before I was done photographing this amazing dessert.

It took a whopping 5 minutes to put these together. My skewers were long so I broke them in half. Added a strawberry, brownie, marshmallow, and another strawberry. It literally couldn’t be any easier. I made brownies but didn’t like the way they looked on the skewer so I went out today and bought the packaged two-bite brownies. It was pretty much the best decision ever. The work is done for you! I love how the melted chocolate looks on top of these skewers and it gives it a fancy look!

One of the things I really like about this recipe is that you can make it ahead of time and store until you’re ready to serve. I bet you’ll want to have a get together just so you can make these! Actually I’m just going to be honest and say you really don’t need any company to enjoy these, they’re great for a single-serve kind of thing! Just to warn you, it might be hard to eat just one skewer… don’t say I didn’t warn you!

As I’m looking at these pictures I’m totally thinking about what else to put on these skewers! More fruit? Some white chocolate?

Strawberry Brownie Skewers

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: 12 skewers

Ingredients

  • 12 mini skewers (or 6, halved)
  • 24 strawberries, rinsed, end removed
  • 12 large marshmallows
  • 12 two-bite brownies bites (store bought)
  • 1/2 cup chocolate chips

Instructions

  1. Assemble skewer by adding a strawberry, marshmallow, brownie bite, and another strawberry onto the skewer.
  2. Continue for the rest of the skewers, strawberries, marshmallows, and brownie bites.
  3. Melt chocolate chips in a microwave-safe dish for about 30 seconds. Stir. Melt for an additional 20-30 seconds, or until chocolate has melted. Stir to incorporate until the desired consistency is reached.
  4. Add melted chocolate to a ziploc bag and cut a small hole in the corner of the bag. Drizzle melted chocolate on top of skewers.
  5. Store skewers in the fridge until ready to serve.

      Yes! I placed the ones in the fridge that I didn’t eat that day and brought some the next day to my parents and they tasted great 🙂
