Mexican Corn Dip

Getting ready for cinco de mayo means planning for alll the things tacos, dips, appetizers, snacks, churros, and anything else that puts you in the spirit! I’ve got quite a bit of taco recipes that range from Salmon BLT Tacos to BBQ Chicken Tacos and you can’t forget about a traditional homemade Ground Beef Taco recipe. I’ve totally got you covered on the taco end!

This time I’m bringing you such an easy crowd pleaser corn dip that’s made with mayo, sour cream green chiles, jalapenos and lots of cheese! Everyone loves a good dip! All you have to do is combine the ingredients, get some chips and get to dipping!

This corn dip is so addicting it’s going to be hard to stop! Although appetizers are made to snack on and to hold you over, I am totally guilty of pretty much ALWAYS ruining my appetite by snacking too much. But this corn dip is sooo good so you’re definitely going to want to try it!

Plus, who can beat a recipe that takes less than 10 minutes to make?

Mexican Corn Dip

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Ingredients

  • 4 (7-ounce) cans mexicorn, drained
  • 1 cup mayo
  • 1 cup sour cream
  • 3 stalks green onion, sliced (about 3 tablespoons)
  • 1 can diced green chiles
  • 1 jalapeno, diced (about 3 tablespoons)
  • 1 cup shredded or freshly grated cheddar cheese
  • 1/4 teaspoon black pepper
  • tortilla chips, for serving

Instructions

  1. Combine all ingredients to a large bowl.
  2. Store in fridge until ready to serve.
  3. Serve with tortilla chips.
